apple coffee cake

Our first week at our new house, our neighbors invited us over to spend some time apple picking on their property - talk about a friendly welcome to the neighborhood! Roark loved it as did Taylor, and I enjoyed watching them up in a tree scavenging for hidden apples while waiting for Roark to hand them down to me to put into our bucket. The lady of the house shared with me her old Apple Coffee Cake recipe and after looking down at our 10lb bucket of apples with a ponder on what to do with them, it felt like a no-brainer to give it a whirl. Because we are gluten free, I swapped the flour for Cup4Cup (which you can easily find at Whole Foods). If you’re gluten free like us, feel free to do the same with your favorite 1:1 gluten free flour!

INGREDIENTS

¾ cup butter

1 ½ cups white sugar

2 well beaten eggs

2 ½ cups flour

1 ¾ teaspoons baking soda

½ teaspoon salt

¾ cup strong coffee, cold

1 teaspoon vanilla

5 cups chopped apples (Granny Smith work great)

½ cup brown sugar

1 teaspoon cinnamon

½ cup chopped nuts

DIRECTIONS

Cream butter with white sugar and 2 eggs. Then add flour, baking soda, salt, vanilla and coffee.

Fold in chopped apples.

Pour into a 13 x 9 x 2 baking pan

Mix brown sugar, cinnamon and nuts, then sprinkle over batter

Bake at 350 degrees for 45-50 minutes.
